Meatloaf in Disguise

I just discovered that muffins are not just for breakfast or snacks anymore. I was at Trader Joe’s and saw, in their freezer section, Meatloaf Muffins. Say what! They were cute tiny rounds of meatloaf with a layer of spinach and a dollop of mashed potatoes on top. Meatloaf is one of my favorite comfort foods and I love the idea of making them into muffins. Piping the potatoes on top of the muffin gives the appearance of frosting. Talk about kid-friendly!

I thought that meatloaf muffins would be the perfect dinner on Halloween. I found a great recipe by Rachel Ray on the Food Network. These savory muffins are fun and easy to make. I may even add some orange food coloring to the potatoes just to add to the merriment of the evening.

Also, if you live in Chicago, you will want to visit the Meatloaf Bakery that features meatloaf and prescribed accompaniments in a variety of flavors and configurations. Meatloaf gâteau anyone?
